More lunchtime Paleo: FULL BLOWN

Here’s a quick doozie of a paleo lunch.

Toss some brussel sprouts (my current paleo favorite!) and kale in a hot wok with some oil and toss a bit. Then add some water and a lid. The pork chops can go in the oven at 425 for 10 minutes as they are kind of thick. Keep an eye on the wok, toss and add water if needed. Also I turned the heat down on the veggies after 5 minutes. PUT IN YOUR FACE & ENJOY!

2 pork chops
2 handfuls of sauerkraut.

Put the chops into a skillet seasoned the way you like. I cooked mine for maybe 8-10 minutes on high-medium heat. Toss the sauerkraut in with the chops for a few minutes and add some pepper. DONE. EAT.

Get. After. It. Eating this way is fast & easy and it will let your gut heal. Try it for 30 days and see if it works? Do you look better naked? I bet you do! Ha!

Super quick Paleo Lunch

Pork chop seasoned with chili powder, sea salt and black pepper. 8 minutes in a cast iron skillet at 415 degrees.

1.5 cups of collard greens and 3 red/yellow sweet peppers sautéed in coconut oil. Get them going then add some water to the pan and cover for 5 minutes.

Super good, and super fast. Get after it.

Here was an easy 10 minute lunch idea.

Following yesterday’s theme of just mixing it up I placed 3 strips of uncured turkey bacon and 1 uncured pork bacon in the cast skillet over medium heat. Then after a few minutes I added spinach, some paprika and a cover to cook down. Wala! Easy lunch.

Todays programming was inspired from yesterdays Crossfit main site workout

Warm up: skipping rope working from singles to running in place to footwork to double unders for 2 minutes

Front Squat: 10×2 with 1 minute rest between sets

working sets at 175#

Squat something

Followed by RUN 5K

Score: an easy pace for 23:11

Now for some delicious paleo grub!

This was super easy to make and only took 20 minutes.

1 medium yam

4 pieces of uncured bacon

2 handfuls of kale

Pre-heat oven to 425° slice yam/sweet potato and put in for 10 minutes

Add bacon, kale and place back into the oven for 8 minutes or so. I finished it off by putting it on the stove top at medium heat for a few minutes while I mixed it up a bit with a spatula. I was super deliciousness…

Get after it and good on ya for it!

Not super difficult to put this one together! Most of my B-fast’s consist of some variation of the following:

5-6 veg fed egg’s scrambled
3+ pieces of uncured bacon (super deliciousness, also it provides plenty of fat to pour off into a jar for later use with vegetables)
Half an Avocado

Wait, “no bread or cereal or pasta” you say? Well yes, I mean this is a paleo blog. Basically I use this as a go to everyday and sometimes include or sub in a banana or grapes or strawberries etc. as you get the idea. While all my meals are paleo, if you’re a beginner bfast is probably the easiest meal to paleo’fy with dinner placing 2nd and lunch usually being the hardest to get used to. Not that lunch is hard to adapt, it’s simply the meal the has the highest probability of outside influences affecting meal choices and no one is a Saint (that I pal around with anyway).

Here is a fast Paleo dinner idea that kids can even enjoy. Not to mention that they don’t mind helping create this little item, and are more than capable of doing so with little supervision.

For Dad:
Grass fed burgers and sautéed kale with halved avocado
1/2 lb grass fed ground beef
3 cups kale sautéed in coconut oil
Half avocado

For son:
Turkey pickle wraps
Turkey slices
Baby kosher pickles

Paleo Steak & Greens

Today’s lunch was quick and easy to prepare because it basically requires no preparation. Which is kind of a food theme for me, low to no prep time = I’m a happy paleo camper.

1 super yummy steak (of your choice)
2-3 cups collard greens
1/2 cup sauerkraut

Toss the steak under the broiler and put the collard greens in a wok with coconut oil over medium heat. Toss in some sauerkraut and cover.

Half way through cooking the steak I like to drain the fat into the veggies because we obviously want to maximize our absorption of fat soluble vitamins, am I right? Not to mention it adds a mountain of flavor.

“good day to you sir, I quite hope you shall enjoy an opportunity to get after it”, which is an old timey way of saying get after it.

If you are thinking it will be impossible to get your child to eat paleo foods you are right, which is why you should stop thinking that way… Being creative and spending some time at everydaypaleo.com will give you plenty of firepower when it comes to getting Kids to try paleo and actually like it.  The best piece of advice I swiped from Sarah Fragoso was to get my Son involved in the process. Anytime I cooked a paleo dinner it would be dismissed hat in hand, but by including Talan in the actual preparation and cooking of our dinner the entire question of eating what was prepared vs. wanting some crappy grain based foods was completely averted! This also created a great context specific time to talk (in a 6 year olds terms) about food choices and to do some discovery with new flavors and spices.

I am of the opinion that it is a huge mistake to treat children as a special case when it comes to food choices. If a food is crap (like all pre-prepared kid’s foods are) then why give it to a child simply for the sake that they are a child. It’s all marketing that has folks thinking we should give children “special” (garbage) foods and then feed them some vitamin enriched milk shake. Children eat what they see their parents eating, and what is prepared for them. The only excuse here that holds any merit is that this does take some extra time, however the extra 1% of time and effort this takes means living a longer, healthier life filled with more energy and better looks. What gift could be greater? Not to mention the extra time is being spent right next to your Child, and this opens the door to more fun in the grocery store by getting them involved in the selection of what THEY think would be fun to cook. Let your kids help you in your efforts to be AWESOME and let me know how it goes because you won’t be disappointed.

Kid Friendly Paleo Chicken Nuggets

Chicken tenders cut into “nuggets”

Let Child place these parts into a bowl with a beaten egg or two (which they can also crack and beat the egg)

Then take these out and place into a bowl with an even mixture of Coconut Flower, and Almond meal.

Place in a pan and cook at 350 degree’s for 25 minutes and hit them under the broiler for a minute or so to brown them up

Now eat them with veggie’s

ON TO THE TRAINING:

On the minute Presses: (reach a 1rm for the session)

Start with a load that can be handled for 5 reps and add weight each set until you achieve failure

SCORE: reps (weight) 5 (75), 5 (80), 5 (90), 5 (95), 4 (100), 4 (105), 3 (110), 1 (115)

rest 5 minutes

7 minute AMRAP 7 dumbbell hang power clean, 7 dumbbell push press, 7 ring push up

Score: 8 rounds

In what way have you been Getting after it?…

Grass Fed Steak with Sauteed Spinach
Toss the steak in a cast iron skillet and broil to your liking. Put the spinach in a pan and sautee with coconut oil, adding salt and pepper to taste. I used about 3-4 cups of spinach.
Oh yeah, dump the fat from the steak pan into the spinach! Remember we want those healthy Omega 3′s and fat associated carotinoids!

Grass Fed Paleo Burgers & Spicy Spring Mix Salad


Grass fed burgers & spicy spring mix
½lb of grass fed ground beef made into patties with some salt, pepper and creole seasoning.
A whole bunch of spring mix tossed in olive oil with red pepper flakes.

If you don’t have time to make these then you need an assistant. That’s a joke, not having 10 minutes to eat healthy there by ensuring quality days for the rest of your life is a cop out and I’m not having that.  Make time, that’s what “Winning” people like Charlie Sheen do.
